Glenn Bowman - Rickys River Bar
Rickys’ celebrated Head Chef, Glenn Bowman, has brought an explosion of talent and taste to Rickys’ tables since 2010.
Famed for his acclaimed Spanish restaurant, Alegria at Sunshine Beach, Glenn is also celebrated for the five years he was Head Chef at the Edge in Darlinghurst.
Glenn leads Rickys’ passion for pristine produce, showcasing the finest local flavours where possible. “Rickys is quintessential Noosa,” Glenn says. “It's impossible to tire of this view, no matter how busy the kitchen is.”

Herb Marinated Chicken Breast with Prosciutto and White Bean Salad
This dish is on the top of my list for summer entertaining dishes. It sits there proudly for a couple of reasons, firstly, it's always a crowd pleaser and secondly, most of the work is done the day before!
Unlike many dishes that deteriorate from being prepped too early, this recipe benefits from it. The beans need to be soaked for at least 24 hours and the herbs will permeate the chicken better if marinated longer rather than shorter. In addition doing all the work so far in advance will once again leave you more time to entertain and enjoy the summer weather for yourself. Bon apatite.

This recipe is crying out for a white wine with great texture, herbaceous flavours and spicy characters to complement the chicken’s herb style marinade.
